First Week of March

This first week of March I started to make one of my families favorite dinners. Chicken spaghetti. See I have this problem. Its genetic and also a product of my environment.. I'm double cursed. I CANNOT cook a small meal. My dad cooks for an entire station and well that's how I cook too. So much of the time its just Joe and I.. and Kennedy but she doesn't eat much. Normally when I make this I put it all in a 9x13 pan and we eat it til we're sick and its gone. But that means we're eating too much and eating it so it doesn't go bad. I decided to divide it  up and freeze it. I got 3 meals out of what I'd pay to make ONE meal!!!

I also made some Oat Rolls and only cooked what I needed and froze the rest.
I cleared out a space in my freezer and decided to start making it a point to do this more often! It saves us money and leaves us eating smaller portions. Also now I can just go to the freezer if I don't have time to cook.
I also made a batch of meatballs and was able to get 3 meals out of one batch too!
I plan to do for a month and see how much I can build up. Its already started working great. A friend of mines brother was in a very bad car accident and I wanted to take her dinner. I just grabbed a chicken spaghetti from the fridge, threw in a bag of salad and garlic bread and it was ready to go! So nice!

Kennedy is a nerd. While I was working on dinner one night she got the Sharpie and started making dots on each part of her finger.
The other day she told me on her next birthday she was going to be 15 years old.. I think I believe her. She comes up with some CRAZY things.. that's for sure
But I wouldn't trade my underwear superhero for the world

I need to start freezing meals again too. I ALWAYS cook for an army too, so leftovers go bad a lot.
