Meat

There has been something in our family that we have done for years..Like since I was small enough to remember and I'm sure years before that! But in the recent time we have realized we have NEVER taken picture! Which is unheard of because my mom is as camera crazy as I am.. where do you think I learned it from! My mom and I decided its because we have always been too busy working to have time to take pictures!

We always butcher our own meat. Deer, Elk, Sheep, Beef, Pig etc. Pretty much if you can eat it we've butchered it. We have great friends Bert (and late Wally) Lambert who have put in a meat shop on their property. They used to do it professionally and have taught my parents how do it. The animal is killed. Then skinned, quarted and hung in the cooler like this. Meat has to sit for so many days to get fully cooled. Here is my dad and Dennis Gay cutting up steaks.
My mom and I always get the wrapping job.

Me and a pile of meat! MMmm
Joe, Dennis and my Dad trimming.Dennis grinding up burger. Look how fantastic that burger looks! I CANNOT stand to eat store burger.. its so disgusting.. especially once you've had home grown.
Dad working the saw
Me wrapping
Cube steaks and sirloins
It was COLD! My mom waiting for more meat to wrap. (AND on a side note look how skinny my mom is getting! She's doing the HCG diet and has lost about 25lbs! GO MOM!)
Cleaning up the steak
Trimming for burger
This year we got a half a beef.. and they weighed less than expected too. This is how much a half of beef fills our freezer!!

We ended up starting at 2:30 and finished about 8:30. We did over 800lbs of meat. This is just our section which is only a half of a beef! So maybe 200 to 250 lbs of meat.
