We always butcher our own meat. Deer, Elk, Sheep, Beef, Pig etc. Pretty much if you can eat it we've butchered it. We have great friends Bert (and late Wally) Lambert who have put in a meat shop on their property. They used to do it professionally and have taught my parents how do it. The animal is killed. Then skinned, quarted and hung in the cooler like this. Meat has to sit for so many days to get fully cooled.
Here is my dad and Dennis Gay cutting up steaks.
My mom and I always get the wrapping job.

Dennis grinding up burger. Look how fantastic that burger looks! I CANNOT stand to eat store burger.. its so disgusting.. especially once you've had home grown. We ended up starting at 2:30 and finished about 8:30. We did over 800lbs of meat. This is just our section which is only a half of a beef! So maybe 200 to 250 lbs of meat.
